STEP 1: Rinse out six 8 oz. canning jars with boiling water.
STEP 2: Finely chop 6-8 peaches (depending on the size of peaches; you will need 2 1/4 cups of chopped peaches). Do not puree.
STEP 3: Stir lemon juice into the fruit. Then stir the sugar into the prepared fruit and let stand for 10 minutes, stirring occasionally.
STEP 4: After the 10 minutes, add 3/4 cup of water and pectin into a saucepan. Bring to a boil and boil for 1 minute, stirring constantly.
STEP 5: Immediately stir the pectin mixture into pre- pared fruit mixture. Stir constantly for 3 minutes.
STEP 6: Quickly fill the canning jars to within a half inch of the top. Wipe off the edges of the jars and screw on the lids. Let the filled jars stand at room temperature, undisturbed, for 24 hours.
STEP 7: You can store your finished jam in your refrigerator for up to three weeks, and it will still remain fresh-tasting. For longer-term storage, simply freeze it. It will keep for up to a year. When thawing, though, leave it in the refrigerator to thaw out.
